Italian Chick Pea Salad with Herbed Oil and Vinegar Dressing

Ingredients
- 1/4 C. red or white wine vinegar
- 1 Tbsp. chopped pimiento
- 2 tsps. Spice Islands® Minced Garlic
- 1 tsp. dried oregano leaves, crushed
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 2/3 C. Crisco® Pure Vegetable Oil
- 1 (16 oz.) can chick peas
- 2 (6 to 8 oz.) pkgs. baby spinach or romaine lettuce
Directions
- COMBINE vinegar, pimiento, garlic, oregano, sugar, salt and pepper in jar with tight-fitting lid. Shake well. Add oil. Shake well again.
- MARINATE chick peas in 1/2 C. dressing for 15 minutes. Toss with salad greens. Add extra dressing as needed.
